Happy Friday, everyone!
I thought I’d share a a quick couple of easy peasy recipes my mom recently shared with me, that I’ve been loving lately. They’re some pretty quick lil fix ups for the fam-because to be perfectly honest, if you’re anything like me, you have no time for anything but simple. Perfect for a late afternoon, last minute dish… these are sure to please!
Corn Salad
What you’ll need:
• 2 cans of whole kernel corn {or fresh corn, if you have a garden. wouldn’t that be nice?}
• 2 cups grated cheddar cheese
• 1 cup mayo
• 1 cup chopped green pepper
• 1/2 cup chopped red onion
• 1 bag of chili cheese corn chips, coursely crushed.
Mix the first five {all but the chips} and chill, until you’re ready to serve.
Add in the corn chips just before serving.
TADA! Now go wow your guests. Or just your little ones, if they’re game. Malone loved this!
You can serve this as a side salad…
{We grilled chicken quesadillas the other night, and it was the perfect little side dish}
Or with scoops as an appetizer dish. MMMMMMM!
And saving the best for last: dessert. Strawberry Ooey Gooey Bars
Get ready , y’all. If you’ve never tried this, my family and I could eat the entire dish in one sitting. I’m having to refrain from munching as I type…
• 1 box of strawberry cake mix
• 1/3 cup of butter {softened}
• 4 large eggs
• 1 – 8 oz. package of cream cheese {softened}
• 1 – 16 oz. box confectioners sugar
• 3/4 cups chopped fresh strawberries
Combine your cake mix, butter and one of the eggs. Press the mixture into the bottom of a lightly greased 13 x 9 baking pan.
Beat your cream cheese, and remaining 3 eggs at medium speed, until smooth.
Gradually beat in confectioner’s sugar until combined. {Try not to spill half of your sugar, like me…}
Stir in your cut up strawberries, and spoon this top mixture over the strawberry mixture.
Bake for 35 to 40 minutes at 350, or until center is set.
TAsweetfreakinlemonadeDAH!
Cool and cut into squares, then be fancy shmancy, and garnish with whipped cream and sliced strawberries, if desired.
…Or get impatient and pig out because it’s ten kinds of fabulous all on its own. Happy weekend! As always, let me know if you try it-or maybe already have!

You know, I so enjoy your blog, seeing all the many facets of talent you possess and I love finding the e-mails that come my way. Thank you for popping your head into my days and for making me want to do something fun and/or constructive! Both of these recipes sound wow-ee but I fear I won’t be able to find the proper ingredients here in Canada. The chili cheese corn chips and the size of the bag – are they similar to a ‘regular’ sized bag of Doritos? I could probably substitute the flavour for something similar here…. I haven’t looked recently but don’t recall seeing a strawberry cake mix here either (although, should I find any, the shelves will end up empty – I l.o.v.e. anything strawberry!) Hmmm, might need a little cross-border excursion to pick up some groceries…as good an excuse as any. Or I might tweak the recipe and try using a lemon mix. I love that corn dip! I served it at my daughter’s b’day party this year. Everyone always goes nuts for it! Except, we used Fritos to dip instead of mixing them in. Definitely trying that next time!
