Hello lovelies + Happy (day after) the 4th of July!
We hope you all had a blast yesterday. It rained nearly all day here, so we took the kids to a movie {where we duked it out with everyone else who had the exact same idea} But it was a nice, relaxing day. And now it doesn’t feel like Friday. ;}
In honor of the most fun + meaningful holiday of the summer, we thought we’d drop in for a quick snippet so share our very favorite red, white and (almost blue) dish. Perfect for last minute fabulous preps, it’s super simple + amazingly delish.
If you’re anything like us, you kind of go through phases with your foods. We totally do, anyway. You may already make something like this… we’ve tried a version or two of it, and a friend of ours mentioned it this last spring. With a little adjustment on our part {we’re total foodie nerds} here’s a super yummy dish we love.
Just take some chicken breasts or strips (we always go organic) and sprinkle it with basil seasoning. We then slice up some fresh green {and sometimes red} peppers and stack them on top. Next, we sprinkle in some (super yummy) goat cheese + then finish it off with a few sundried tomatoes.
All of it to taste – We tend to pile it on and eat it on the side, as well. ;}
Into the oven it goes : 20-25 minutes for around 350 degrees, depending on how your oven bakes.
Tada! We love ours with a side of spinach salad, homemade bread… and of course, a big yummy potato. It’s easy, nearly effortless… and not too shabby on the health side of things either.
