It’s football season around here, {War Eagle! Or go-team-you-are-for-unless-it-helps-Auburn-if-they-lose. Sorry not sorry} and we southern folk have cultivated the whole tailgating thing {and all things food related} to a fine art. Which means the season is upon us for bacon cheeseburger dip. It’s also the season for eating a little crazier than usual and splurging for fun on the weekends whilst later making up for it with lots of salads.
Shhhhh. It’s all about the balance.
This past weekend we were with some friends in Auburn, tailgating in style as our Auburn Tigers played LSU. It’s like a little vacay away from the rush of it all – a fun way to kick back and just enjoy the moment.
{In case you were wondering who’s who in the photo – That’s not Ashley and me with tight jeans and cowgirl boots, snuggling. Though I’m sure that ensemble would look great on me. Those are Emerson’s bare feet in a chair with Ashley. People were asking.}
But back to the fine art of tailgating: A friend and I even built a tire swing for the kids, you can see how that worked out.
Saturday was probably the craziest weekend ever in college football history! So Oregon, Oklahoma, Alabama, Stanford, USC, Texas A&M and UCLA fans… just remember: Bacon makes everything better.
Today we want to share one of our tailgating favorites.
Bacon Cheeseburger Dip – The Perfect Tailgating Recipe
It is a super simple, yet delicious little recipe, and dips are kind of our obsession when it comes to splurges.
Here is what you’ll need:
• 1 lb cooked ground beef • package of bacon, cooked • 1 can of original rotel with peppers • 2 cups of shredded cheddar cheese • 8 oz cream cheese • 4 oz. sour cream • 8 oz block pepper jack cheese • 1 cup shredded mozzarella cheese • dippers of your choice
Start by softening your cream cheese, then mixing in your rotel and sour cream.
Slowly add in 1 1/2 cups of the shredded cheddar. Cut your pepper jack into chunks and add it, stirring well.
Finally, add the ground beef and the bacon, mixing everything throughly.
Spread the bacon cheeseburger dip into a casserole dish and cover with the shredded mozerella and the extra 1/2 cup of cheddar.
Bake on 350 for 25-30 minutes or until the edges bubble.
This bacon cheeseburger dip is one for celebrating or drowning your sorrow – whatever the occasion might call for… we’ve all been there. And bacon is here to help.
Simply pick your dippers and dig in. (We love pita crackers and fritos.) You could also make this with chicken or turkey – the possibilities with your own twist are kind of endlessly delicious!
