Moving is never easy and renovating a home is even harder. And even though we’ve run into some not-so-fun issues to deal with in our renovation and all things inspections, there are so many things we are loving about our move to the new place.
For one, Ashley is loving the new riding lawn mower.
Never mind that She’s never touched a mower, and now that we have one that drives, she’s all about it. Basically just posing on it. No shame.
{It took me three and a half hours to cut the acre yard with our push mower the other day, so this was kind of at the top of our list, even though I really enjoyed the workout.}
The kids are loving all the space to play, and the new pool…
Well, the idea of the new pool because really it’s just a cess pool right now…but it’ll be open very soon. We have the official countdown.
And one of the things I am loving the most, is the discovery of a peach tree on our property. The idea of plucking a summer peach straight from the tree while outside has me more excited than that time I was finally able to purchase the riding lawnmower.
And while the peaches are still coming in I’m going all Benjamin Buford Blue on everything we can do with them. {PS. Isn’t that the greatest name ever?} Peach cobbler, peach jam, peach salad, peach pie, peach ice cream, peach lemonade, grilled peaches, peach pancakes, peach muffins, peach smoothie, peach martini and the list goes on. We’re having a peach party, mid-July so stay tuned.
But today, we wanted to share with you a fun little summer fruit salsa with you guessed it… peaches.
This is a super simple recipe and you can use any fruit combination, but here’s what we used:
• 1 peach • 1 Apple • 5 oz blueberries • 3 oz raspberries• 1/2 cantaloupe • 6 large strawberries
You’ll also need 6 TBSP of fruit preserves (we use strawberry) and 2 TBSP light brown sugar.
First you’ll want to dice up all the fruit up in a large bowl. Then, mix the brown sugar and fruit preserves in a smaller bowl until blended. Once blended, pour it over the fruit and toss it together.
We love to serve ours with some simple cinnamon graham crackers. It would even make a sweet topping for vanilla ice cream. It makes for a light, fun summer sweet.
