One thing I learned early on when Ashley was pregnant with our first child Aiden, is that carvings are real and you’d better not mess with them.
One thing she craved was lime. We’d never been lime people up to this point, but once the craving hit, it never left. 10 years later and we are the people in the restaurant asking for limes in our water while everyone else is happy with lemon. I remember when a certain chip company came out with lime flavored chips, you would have thought we won the Powerball. It’s the little things.
Any time we can work lime into a meal, we’re all about it. And we love this delightfully simple cilantro honey lime chicken recipe.
We created it the other day from what we had on hand.
Here’s what you will need:
• 2 limes • honey • all purpose flour • crushed cilantro • grilled chicken breast • salt • pepper • red, yellow and green bell peppers • white onion • chicken broth or stock • spinach • extra virgin olive oil • fresh pineapple
Start by zesting 1/4 of a lime into a pan and using the juice of both. Add in 1 cup chicken broth, 1 tsp salt, 1 tsp black pepper, 1 tsp crushed cilantro and 1/4 cup honey. Set it aside for now.
Marinate two chicken breasts in extra virgin olive oil and grill until fully cooked, about 20 minutes. You will also want to either grill or sautee your veggies, and grill your pineapple.
While the chicken, peppers and onions are cooking, bring the above mixture to a boil.
Once it boils, turn the heat down and add in 1/4 cup of all purpose flour to thicken. Stir as you simmer it.
Taste and adjust the seasonings to your liking.
We like to slice our chicken over a bed of spinach and drizzle the sauce over both. Then, we serve it with a side of grilled pineapple and the peppers and onions.
