It’s fall, y’all! Well… the calendar says it’s fall anyway. It’s still in the 80’s and the leaves may still be green here {boo} but we choose to believe that somewhere the leaves have turned and there’s a brisk, cold wind blowing. And that’s enough for us to declare that it’s soup season! Yay soup season! Here’s our favorite tomato chicken tortellini soup recipe even if we do turn the air down {Up? Is up more? So confusing} and throw on a comfy sweatshirt as we pretend. No judging.
This might be one of our new favorite soups. Ashley and I finished it off in less than 24 hours, {again no judging}. And it’s super simple to make, but the taste is amazing! The ultimate cold weather comfort food.
Tomato Chicken Tortellini Soup Recipe
Here’s what you’ll need for tomato chicken tortellini soup:
• 28 oz of diced tomatoes • 6 oz tomato paste • 1 Tbsp unsalted butter • 1 1/2 cup cooked chicken • 1/4 cup minced white onion • 2 1/2 cup chicken broth • 2 1/2 cups cheese tortellini • 1 Tbsp salt • 1/2 Tbsp black pepper • 1/2 tsp garlic powder • 3/4 cup heavy cream {you can try substituting greek yogurt for a less fattening option, but we went for the cream} • shredded mozzarella cheese
We like to use a rotisserie chicken, but if not, start by cooking and shredding your chicken.
Then you’ll want to cook your tortellini according to the instructions. (Hint: we use the same pot we are cooking the soup in to cook the tortellini. Less dish washing.)
Once the tortellini is cooked, drain and set it aside. In the pot, pour all your ingredients, except the tortellini. Bring them all to a boil and cook on a medium heat for about 15 minutes. Add the tortellini back to the soup and cook another 5.
We then turn the heat off and let ours rest for 10-15 minutes, but you can serve it right away if you’d like.
We love to top ours with cheese, because, well cheese.
It’s kinda like bacon… it makes most things better. And if you want to be fancy, throw a couple of leaves of parsley on top. Your mother in law will be impressed.
