Right after our love for renovations and design, is our love for good food.
So when we get the chance to work from home, around lunch time we love to take a quick break and whip up something fun.
One of our new favorites is our cheesy chicken and rice burrito bowl. Do yourself a favor and trust us on this one, unless you don’t like Mexican…and if that’s the case you’re dead to us.

This is a super simple dish, and as they say in these parts, “slap yo mama good”
Here is what you need for the rice: {Yes, it’s a bit of a splurge in the carbs and cheese department}
• 4 cups cooked white rice
• 4 oz green chiles
• can of original Rotel
• 1 1/2 cup sour cream
• 2 cups shredded cheddar cheese
•2 cups Monterrey jack cheese
• fresh cilantro
• 1/2 tsp salt
• 1/4 tsp black pepper
• dash of crushed red pepper
(For the salt pepper and red pepper, you can adjust to your liking.)
Cook your rice fully and preheat the oven to 350 degrees. Once cooked, mix it with all the ingredients, except the cilantro and about 1/4 of your cheese to use as a topping. (I told you this was simple.)
Then add the rice mix to a baking dish and cook for about 15 minutes.
Remove it from the oven and cover with cheese and some fresh cilantro, then cook it another 10 mins.
The stir fry is just as simple. You’ll need the following:
• 3 large chicken breast
• 1 green bell pepper
• 1 red bell pepper
• 1/2 -1 onion
• avocado
• olive oil
We typically like to marinate the chicken in olive oil and grill it while we cut our peppers and onions into strips.
Saute them in a TBSP of olive oil.
Once the chicken is cooked we add it to the veggies and saute together for a few minutes. You can add your favorite fajita seasoning if you want a little more flavor.
We then toss it all together in a bowl, top it with avocado and eat to our little happy heart’s content.
And sometimes more.
