We’ve said it before and we’ll say it again, our job is weird {in the best way possible}. One minute we’re meeting with a cabinet company and marking lines on a client’s floor, mid-demo for kitchen plans… the next we’re baking cookies for a photoshoot. I guess that’s what keeps us on our toes… the spice of life and everything.
We’re thrilled to join our friends today for a sweet Easter treat idea! This is one of our most all time faves, and since it’s so easy and classic, we thought it would be great to share just in time for spring.
These are adopted from Jamin’s Mom’s homemade recipe – so you may have something similar. But they’re super simple to make.
Here’s what you’ll need to make the sugar cookies:
• 1 cup coconut oil {if you don’t have coconut oil, you can use shortening}
• 4 cups flour – all purpose
• 1/2 cup of milk
• 2 eggs
• 2 cups sugar
• 1 tsp baking soda
• 1/2 tsp salt
• 1/2 tsp vanilla flavoring
• cookie cutters of choice – we went with an easter theme.
Cut your coconut oil {or shortening} into flour using pastry blender, fork, or food processor until consistency is similar to corn meal.
Then, combine the remaining ingredients, and mix in with flour/coconut oil.
They yield a generous amount, and the batter can easily be stored in the fridge for later once one batch is made. The possibilities are endless!
Bake at 350 degrees for about ten-twelve minutes, depending on your oven.
Icing
The icing is oh so yummy and easy to mix! I found that the right tools made the difference when it comes to decorating:
Bottles: We loved using these bottles {just trim the tips for large or small points} or bags
Food coloring: gel food coloring
Baking pen: needles for little artist palettes.
Note: for smaller hands, bag icing is the way to go. For older kiddos, the bottles worked great. The hardest part, is actually getting it INTO the bottles. So bags also work great here.
Icing recipe- oh so easy!
3 cups powdered sugar
4 Tbsp milk
1/2 tsp vanilla + 1/4 tsp almond extract
3 Tbsp light corn syrup
For each color, I simply scooped out a little with a spoon, and mixed in a bit of the gel coloring in a smaller bowl.
Then I added to each bottle by spooning them in. They were ready to decorate!
To decorate some cookies, I just used an icing base, and then drew with the pens/bottles on top.
Get creative and have fun! They definitely don’t have to look perfect if you see ours below – I was proud ;}
