Hey guys! We’re back today with the perfect, cold weather, cheat-day, comfort food: cheesy ranch & bacon potato soup!
It’s one of our go-tos for a good, hearty soup that will warm your day. And your tummy.
Ashley has been feeling under the weather this week with a small cold, and she claims it’s her favorite {besides a triple dose of OnGuard, Vitamin C, and fluids, of course}. It’s also an easy recipe you can leave on a slow cook via the crockpot during the day. This soup yields a generous amount to easily feed a family of five, so you could even freeze it and save some for later.
The possibilities are endless.
Here’s what you’ll need: • 5lb bag of potatoes, chopped •32 oz of chicken broth • 1 dry ranch dressing packet + 1 cup chobani substituted for mayo + 1 cup milk {per ranch packet directions} • 2 cups cooked bacon crumbles • 1 tablespoon minced onion • cheese to taste – {we love mozzarella and cheddar, and used about 1.5 cups} • salt + pepper to taste {around 1/2 tablespoon each}. Add or subtract ingredients as desired.
Put all ingredients except cheese into a large cooking pot and bring to a low boil for about thirty minutes, stirring occasionally. When the potatoes are soft, turn off the heat, and gently mash them with a large spoon as your stir, to give it a creamier consistency. Add the cheese and stir in ten minutes before serving.
Tada! Instant comfort. And an easy meal your littles will probably love, too.

Love potato soup and will likely try this recipe although my normal go to is a cheat (frozen bag of hashbrowns, ahem :)). BUT what I REALLY want to know is WHERE did you get that copper mug…must. have. If I was hungry I’d totally be coveting that bowl of soup…but as luck would have it, I’ve already eaten…so…the cup? Do tell…

This sounds amazing and I also want to know where that gorgeous copper mug is from? My grandma would always serve us cold milk in cups like that and recently I had an ‘adult beverage’ served in a mug like that— stayed so cold. Thanks for all of your posts. I’m a faithful follower!

For ladies and gents on an Atkins/low carb Ketogenic diet, use roasted cauliflower instead of potatoes, and change the milk to heavy whipping cream. Yes, i said heavy whipping cream. The yogurt and/or mayo could stay depending on personal preference. I know it sounds crazy that this recipe could be on a weight lose diet! but it’s all about keeping the carbs LOW on those diets. It’s the only diet to work for me successfully after babies, and this great recipe could be on it! Cheese and bacon are ok! Woo-hoo!
