We’re thrilled to be back today with some of our fave sites, sharing one of our very favorite all time fall recipes: Chicken lasagna soup!
Lately, our oldest has really taken up all things cooking. He’s truly interested, and honestly, nothing makes us both more delighted. Is there anything cuter?
While I’ve been known to whip things up on occasion, Jamin is actually the cook at our house. We’re all about throwing people for loops with gender roles and stuff over here at The Handmade Home.
He wanted to try his hand at one of our faves the other weekend, and we were more than happy to let him go to town in the kitchen. Hurray for fresh cooked foods by everyone! Hurray for getting the family involved, and preparing our kids for life outside of the house.
Super simple to make. And it’s perfect for fall and all things comfort food. We paired ours with “homemade” cheesy bread. Which I’m sure is absolutely terrible for you, but every now and again, you need some good cheesy carby food in your life, amirite?
Here’s what you’ll need:
1lb chicken
2 cups pasta of your choice
3 T. Parsley flakes
1/8 T. garlic powder
1 T. Basil
1 T black pepper
1 1/2 T kosher salt
8 oz tomato sauce
6 oz tomato paste
32 oz. chicken stock
3 small tomatoes diced
8oz cup Ricotta cheese
6 oz fresh parmesan cheese
8. oz fresh mozarrella cheese
First, start by cooking your chicken. Then simply shred the chicken and dump it in your cooking pot.
Next, add all the spices, the tomatoes, tomato paste, tomato sauce, pasta and chicken stock.
Boil all of this together for about 12-15 minutes.
Finally, dump all the cheeses and boil until they are fully melted. Stir often to help it melt evenly.
For the cheesy bread:
mozerella cheese sticks
croissant rolls
garlic
Roll one triangle of bread around one mozzarella stick. Bake on 350 for fifteen minutes until cooked or golden brown.
Perfect for dipping! And eating your feelings. No worries, we’ll share a salad next time. It’s called balance.
Let it cool and you’re ready to go.
Easy, fast and perfect for the whole fam. He was so proud! And so are we.
