When we were in Jamaica {right before the world went crazy} I tried something fun one morning for breakfast. I was all about trying different things on our trip. This particular open faced breakfast sandwich originated in a New York delis. But I’d never had one before. I know. I sound so diversified and brave right now. Feel free to roll your eyes.
Eggs Benedict may be nothing new to you. But they are to me, and this particular version we’re sharing with you today, is kind of amazing.
For anyone curious about the story behind eggs benedict, they originated in 1894 in New York, when a Wall Street broker Lemuel Benedict ordered “buttered toast, crisp bacon, two poached eggs and a hooker of hollandaise sauce” at the Waldorf Hotel.
This version is a twist on that, and it was so amazing, I was obsessed with recreating it when we returned.
This is really simple for some who haven’t had it before, but we thought it was pretty amazing. We’re thrilled to be joining some friends to share a little Mother’s Day brunch recipe link up. And though we know that’s not possible for everyone {and by everyone we mean most people} right now to gather with loved ones, we thought it would still be a good idea to share for future purposes, or something you can enjoy at home. At least to humor yourself in the meantime.
It’s a simple delicious, hearty breakfast, and if you love eggs, you’re in for a treat. What we love about this recipe, is that it’s flexible with lots of options, based on your current situation or laziness level. In the apocalypse? No problem… we have some ideas you can substitute. Crunched for time and starving? We have options there, too.
You’ll need:
• poached eggs
• salmon {smoked is best}
• mini bagels {toasted}
• hollandaise sauce
Step 1: Start your hollandaise sauce.

Follow the directions and stir + simmer while your eggs and bagels cook.
Step 2: Toast your mini bagels, or cook them on 350 in the oven until desired amount of crispness has been reached.
Step 3: Poached Eggs
The grocery store was actually out of eggs the last time we went, but we’re lucky to have some amazing neighbors who share theirs. God bless the chickens. Note: if you’re not a fan of poached eggs, you can just cook them more. I know not everyone loves the not-cooked-fully approach. Again, options.
The perfect way to cook poached eggs:

Jamin knew I was so obsessed, he surprised me with one. Apparently, egg poachers are my love language. These actually make the perfect poached eggs. 4 minutes cooked in the egg poacher, and they are perfection.
But if you want to make sure you even like them first, you can totally do them in a muffin tin.
For muffin pan poached eggs:
Preheat your oven to 350°F and add a little water {about 1 tbsp to each cup where you want to bake an egg in your in muffin pan}
Crack your eggs into each cup. Season them with a pinch of salt and pepper to taste.
Bake until egg whites are set, and the yolks are still runny.
This takes about 9 minutes, but you can also do this to your desired amount.
Let them stand for about one minute. Scoop out and serve!
Step 4:
Remove your bagel when the eggs are almost done, and add your salmon.
Salmon: We grabbed some from the local store, already cooked. Smoked tastes best.
You can also substitute fried ham or bacon or just about any meat – even turkey would do – for a sandwhich-y kind of vibe. We love the flavor of the salmon with everything else, though. I have this thing for salmon and we search quickly at the store every {scarce} time we go.
Step 5: Add your poached eggs on top!
Aren’t they cute? They look like little hats. Or the breakfast version of the Hamburglar. Maybe just Grimace? I’d say I need to get out more but…
Step 6: Add your hollandaise sauce. Sprinkle a little salt and pepper to taste if you wish, {but we don’t think you’ll need any}.
Alternative recipe: Try this with a combo of bacon, tomato, guacamole + feta cheese! {just add poached eggs + bagels, or even toast. YUM!}
Step 7: Get in mah belly!
This is so delicious, you’ll love it!

One of our local breakfast joints makes a Tex Mex version of eggs benedict, which is a poached egg on sweet jalapeno cornbread with chorizo, pico, avocado and white queso instead of the hollandaise. It’s heaven on a plate. They add sour cream too, but I’m not a sour cream fan.
