New year, new you… right?
Isn’t that what they say? What if you’re totally okay with the old you?
I mean, we all have things we’d like to change, but it wasn’t so bad in 2015. There’s tons to be thankful for, and we’re focusing on that.
I’ve got an amazing family and everyone stayed relatively healthy sans that near death experience with a garden stool.
We put into motion a {kinda scary/exciting} transition to a new city… hello Nashville! See ya real soon!
{The kids look super thrilled about it… Promise they actually are.}
We traveled, we laughed, we cried. We laughed ’til we cried.
We enjoyed friends, family and ate ice cream in the sun. And even took a photo to document the fact that Ashley eats like a two year old.
And it marked a year for me from when I walked away from a not-so-wonderful situation for the sake of our family, to be self-employed.
The new boss is pretty cute.
Oh and we launched a bunch of our own lines in our studio! We can’t wait to watch it grow…
Of course with all the great things, I may have eaten a little unhealthy…And Ashley might have developed her own made-up jingle for when she’s in the mood for Five Guys… that all the kids now sing and think is a real thing. So perhaps cleaning up the eating…for the arteries’ sake would be good.
We decided to reel it in a bit in the unhealthy things/calories department. It’s all about balance, right?
We’ll see you soon also, Burgers. Isn’t that what the occasional cheat days are for?
So we will kick off the new year with a easy honey lime vinaigrette dressing, to add a little sensible flavor to those salads. If you’re anything like us, you need a little flavor right now.
It’s super simple. Here’s what you’ll need:
• 1/2 cup extra virgin olive • 1/2 cup fresh squeezed lime juice • 1/2 cup balsamic vinegar • TBSP of honey • 1/2 tsp salt or to taste.
Simply mix it together, and it’s an instant spruce up to your salad.
We typically grill some chicken, place it over some baby spinach with a touch of feta {only a touch} and some tomatoes.
Of course, you can add whatever you want.
Drizzle lightly on top, and enjoy!
Simply store the extra dressing in a jar in your fridge and stir it well before using again.
As always, let us know if you try it!
Hope you have a great 2016 and we’d love to hear what you’ve loved about your 2015!
