Jamin and I have one of our very favorite recipes.It’s a little bit of a beloved fave in our friendship circles whenever we gather, and we always love making it. To the point where if it’s not served up at our house, or we’re not bringing it to the current destination, I do believe we’re setting ourselves up for some disappointed friends. Promise we don’t think that highly of ourselves. It really is that good. ;} It’s our homemade guacamole, and I realized that when a recipe has been polished and perfected over time… one must share it.
And also, because Mexican food. And who doesn’t love homemade guacamole?
That’s all of a reason anyone needs, yes?
So today, I decided we’d have a simple post, and do just that. Homemade Guacamole. Say it five times fast.
Here’s what you’ll need: {adjust to serving size, and taste}
Homemade Guacamole
Homemade Guacamole – supplies
• guacamoles • salt • lime juice • tomatoes • yellow peppers • onion • tomato • cilantro • feta cheese
Dice the veggies and chop the cilantro and set all your ingredients aside – but in our book, the chunkier the better.
Mashup your avocados, and place in a bowl. We love our own mortar and pestle for a super conveniently sized pulverizer. Also, it makes me feel like a mad scientist/master chef or something.
Nope, I don’t get out much.
Homemade Guacamole – mix it
Depending on what you want the ratio to be {We didn’t use all these ingredients pictured since we only had a couple of avocados at the time} we probably usually have about this much 1/2 a cup of diced veggies to every three avocados. Add them as you go and slowly stir them into the avocados.
Then add salt + lime juice + cilantro + feta to taste.
And by ‘to taste’, I mean a lot because this guacamole is everything and you’re not living until you’ve tried it.
Okay fine. Maybe reel it in a little on the salt. That’s an obligatory disclaimer so no one gets mad.
We serve some up with our favorite pita crackers or lime chips {these are the gluten free kind – I recently decided to start here nutrition-wise in my journey {I feel like battle would be more apt} with all things endometriosis – wheeeeee! Next, is dairy in the cutting-out department, so hoping gluten free works since it’s so doable.} I’m just eating better {and fresher} in general. But we love this little dish because it’s like we’re still being mostly healthy whilst also totally indulging.
