So did you know that Saturday was national cheesecake day? Hashtag ItsAlwaysNationalSomethingDay. But we felt like we kinda missed out… Unless you plan ahead for these national shenanigans it’s almost impossible for one to celebrate appropriately. But cheesecake day is kind of something you don’t want to miss out on. Because cheesecake. And we wanted to share one of our favorite all time recipe ideas for a simple partay to celebrate. So without further ado, one of our favorite little ideas – A Cheesecake Bar!

We’re constantly amazed at the itty bitty taste buds of the offspring.
It seems to be an act of congress to get them to agree on anything food related. I’m convinced the food table was the birth place of dictatorship, as democracy simply never works with food choices.
But there are those occasions when it is nice to give them options. Especially self serve options with a fun twist.
They all love cheesecake, but of course, not all the same flavor on their cheesecake. So this little idea came to us as a fun solution. {Feel free to guess which topping goes with which kid.}
We’re sharing today because this is the perfect little recipe for anything from get togethers with friends to football parties and baby showers.
Here is what you will need:
• box of super moist yellow cake mix • 1/3 cup butter • 3 eggs • 16 oz cream cheese spread • 1 cup sugar • 3 tablespoon vanilla • 2 cups sour cream • + various toppings
Start by mixing 1/3 cup butter and 1 egg. Then, add in the yellow cake mix. Blend these together until you get a batter that resembles the consistency of play dough.
Once mixed throughly, grease a cupcake pan. We used a small cupcake pan and a normal size to provide variety for various appetites, both in easy bite sized portions perfect for parties. Take a small ball of dough and press it out in the bottom of one of the cups in the pan, and using two fingers, form the dough around the edges to form a outline of the cup. We recommend making it pretty thin. Continue this process until all the cups in the pan are filled.
Next, place into a glass bowl the 16 oz of cream cheese. If it’s not already soft, warm it up a bit to soften it. Add 2 eggs, 3/4 cups of sugar and 2 tablespoons of vanilla. Mix it until completely blended, and smooth.
You will spoon this mixture into the cups you just pressed out, filling them about 2/3 or slightly more full.
Bake on 350 for 15 minutes, but keep an eye on it as baking time can vary by oven and thickness of the cups.
While the cups are baking, mix in a bowl 2 cups of sour cream, 1/4 cup sugar, and 1 tablespoon vanilla. Blend it until it is smooth, cover and place it in the fridge.
Once the cups have baked, allow them to cool and then remove them from the pan. We find it is easiest to twist them loose and them gently lift from both sides.
Once they are cooled, you will add the mixture on top that you placed in the fridge. It should come right to the top of the cups or a little over. Almost looking like you dabbed some whip cream on them.
Go ahead add your favorite topping and enjoy! (We simply used ice cream toppings or pie fillings from the store, and generally stick with caramel, chocolate and strawberry). Or place them in the fridge until they’re ready to eat.
These are great for parties or get togethers with friends and the topping combos are endless!
