In my experience, we all have vivid memories of childhood that live on with us forever. That are sparked with the occurrence of an event, smell or sight.
Every time I see barbed wire, I think of the time my brother jumped his bike into a barbed wire fence. Or for years, Valentine’s icons made me think of that time I was dumped on Valentines by my 5th grade girlfriend… yeah I’m looking at you, Jamie. Spring nights make me think of playing baseball late into the night as a kid. And grilled cheeses remind me of summers by the pool, because all country club pool restaurants sell massive amounts of grilled cheeses to kids during summer break.
A good grilled cheese is a comfort food, American staple. And I really don’t ever think you out grow it, but you do learn to add to it. Step it up a notch.
This is why I crafted what I lovingly call the big kid grilled cheese. Made with more love than that cook at the local pool, and probably with a few less health code violations.
You only need a few key ingredients to please your taste buds and remind them why you should never grow up:
• a couple slices of your favorite bread • butter • gruyére cheese • american cheese {the kind from the deli not the pre-packaged stuff} • 1 thick slice of turkey form the deli • fresh tomatoes • and of course, bacon
Shameless plug… here.
Simply start by spreading butter on one side of your bread and lay it face down on the pan. Then add a layer of gruyére cheese, the turkey, the tomato, the bacon and then the american cheese. Finally butter another piece of bread and place it on top with the buttery side out.
Turn the heat on low and let it begin to cook/melt. Once it begins to brown/melt flip the sandwich and let it cook on the other side.
Simply cut it on a diagonal {I mean, really you can cut it however you prefer. We know people get opinionated on how their favorite sandwiches are served} and enjoy. An easy, amazing change to the classic kid’s grilled cheese.

Mmmm…grilled cheese. A staple in our house. My favorites are cheddar, bacon, and tomato on sourdough or the caprese! One of our step it up techniques is to sprinkle garlic salt on the bread right before the last flips! mmm….even though I am not hungry, now I know what I am having for lunch!

Thanks for sharing this! It sounds particularly good for a rainy cool day which we are having right now!! We have been making grilled cheese with two or three kinds of cheese (sharp cheddar, provolone, colby jack, muenster, whatever we have on hand) and then adding super thin slices of apple . And placing that on buttered Artisan bread. So delicious. Now I think we will have to add bacon as well!
