If you’re friends with us on instagram, you may have noticed we had a little bit o’drama this past week. {The short story: don’t stand on ceramic garden stools to place a blanket on the top shelf of your closet, because they will explode and cut off your leg. And I will freak and call 911 and hang up on them and then call again because… panic. In the scary movies, I’m that person. And Jamin was actually keeping me calm whilst holding his leg on and seriously that was the most random thing ever and we’re just really thankful he’s okay. Ambulance rides and late night trauma surgeries- wheeeee!} So as we were overdue for a recipe and this was perfect timing while he’s in recovery mode, I’m stepping in and taking Jamin’s usual place because pain pills are good times.
Today we’re sharing one of our very favorite perfect party dipping recipes …and a fun little snack that’s sure to play with your tastebuds.
So without further ado {and all the gory details} how to make pimento cheese pinwheel poppers!
Say it five times fast. In retrospect, this probably goes in the same category as my glampy cabana title, as sometimes I’m known to get a little carried away with the whole wordsmith side of things. But all things idiosyncrasy/dorkfest aside, here’s what you’ll need:
6 oz Cream cheese • 1 ½ cup Sharp cheddar (grated) • 1 ¼ cup pepper jack (grated) • ½ to 1 jalapeno pepper, seeded and diced • ¼ teaspoon black pepper {or to taste} • ½ teaspoon salt {or to taste} • 7 oz pimentos drained • ½ teaspoon cayenne pepper {or to taste} • ½ cup mayo • ¼ teaspoon Minced Onion• ¼ teaspoon garlic powder
We left a lot of things “to taste” because we know that a lot of people prefer things to different degrees with their own tastebuds. So with this one, we recommend mixing in the ingredients and tasting a little at a time to make sure you don’t overdo it in the spices category.
Soften the cream cheese and mix in with mayo and seasonings. Add your pimentos and jalapeño, and once it’s all stirred in together, add in cheeses.
You can use this as a perfect little pimento cheese dip, but we took it a step further {and we learned this little trick with our tailgating comrades this fall – food aficionados who don’t mess around} :
Pinwheel Poppers!
We used some pita crackers with a little of the dip on top, and placed them in a circle. {You could do lots of little ones for a party} and then garnished with a spicy sweet banana pepper.
I wish I’d known about these when I was with child so I had an excuse to eat them endlessly. Partay in your mizouth.
