If we’re honest, it’s been really hard for us to decide what we love most about the new house. We love so many little elements and details. But I think as the cold weather has been setting in, we’ve really fallen for the kitchen.
I mean, it’s not like that was hard to do. But what we really love, is all things cooking.

We forgot how much fun we have cooking and eating. That’s our idea of a good time. ;}
Okay, let’s be honest… we really love the eating part the most and that drives our love for cooking. But there’s something crazy fun about creating fun recipes in your own house after waiting for so long. We’ve missed that. So we’re super thrilled to be learning all the ins and outs of our new Frigidaire Professional appliances and trying out all the fun features. (You can read about this little adventure here.)
So today we thought we’d share one of our favorite lazy Saturday morning recipes that are great for lounging around, tailgates, brunches and so much more: The best homemade buttermilk biscuit sandwich.
Oh, and we add fried bacon, pimento cheese and tomato as well… but that made a really long title so we reeled it in.
Here’s what you’ll need:
• Homemade biscuit (recipe below)
• Sliced ham (not deli ham, but good old fashioned sliced ham)
• Pimento cheese (you can use store-bought or our recipe below.)
• Fresh tomato
(Helpful hint: If you only have time to make one thing, make the biscuits and buy the pimento cheese.)
To make the biscuits you’ll need:
• 2 cups flour
• 1 1/4 cup butter milk
• 1/3 tsp baking soda
• 1 TBSP baking powder
• 1 tsp kosher salt
• 8 tsp unsalted butter
You’ll first set your oven on 450 degrees so it can pre-heat while you mix the dough. Then, cut the butter into tiny chunks. One of the things we love about the new ovens is the no-preheat feature. It’s a great time saver for those mornings we are in a hurry.
Place the butter in a bowl, and mix all the other ingredients except the buttermilk into the butter..
Once you’ve blended everything and it resembles a crumbly powder you can mix in your buttermilk and blend again.
When it’s all blended, it’s time to form your biscuits. You can either roll them out, create drop biscuits or pat some out with your hands. There is really no wrong way to do this. We simply pat some out. (If you do it this way, you might want to put a little vegetable oil on your hands to keep the dough from sticking.)
Place the biscuits on a greased pan, and cook for about 12 minutes on 450.
While the biscuits are cooking, it’s time to fry the ham. We love using the griddle attachment on our Frigidaire Professional Cooktop. Not only is there an amazing taste, it leaves those fun little grill marks. You’ll want to fry it for about 3-5 minutes on each side.
Once the biscuits are done, slice them, place a half slice of ham on them, spread some pimento cheese over the ham, top with a tomato, and serve.
They truly make the best little handheld food.
And here’s a fun pimento cheese recipe, although there is no shame in the store purchased kind:
Simply soften the cream cheese and mix all the ingredients together. Some is to taste, so start out slow and add in as you feel like it:
6 oz Cream cheese • 1 ½ cup Sharp cheddar (grated) • 1 ¼ cup pepper jack (grated) • ½ to 1 jalapeno pepper, seeded and diced • ¼ teaspoon black pepper {or to taste} • ½ teaspoon salt {or to taste} • 7 oz pimentos drained • ½ teaspoon cayenne pepper {or to taste} • ½ cup mayo • ¼ teaspoon Minced Onion• ¼ teaspoon garlic powder
Enjoy – this recipe makes the perfect little entertaining savory piece, or just for yourself on a rainy day. Yes, please.
