Some people say there is a grilling season.
I choose not to be friends with those people (kidding not kidding). Why would you only limit the yumminess of the grill to a season? As far as we’re concerned, every day you’re alive is grilling season.
We absolutely love grilling, and by ‘love grilling’ I mean I love to grill out and Ashley loves to eat what I make. This is a very happy compromise for all, because I might be what the kids call a little bit of a control freak when it comes to cooking.
So much so, that I like to go at it alone. I know I have issues, but at least my issues result in yummy food for the family.
At least that’s what I’m telling myself.
I love grilling on both a charcoal grill and a gas grill, but if I’m honest over the last few years, I’ve been drawn more to the gas grill.
I became tired of the prep to get a charcoal grill burning, even with the help a charcoal chimney. And I really can’t stand the aftertaste if I use lighter fluid. So I just went for easier, although I prefer things cooked over charcoal.

And speaking of amazing dishes, we’d be crazy not to talk about grilling, and not share something yummy.
So without further ado, here is our mouth-watering cheesy barbecue bacon chicken, with a side of grilled corn and spinach/fruit/blue cheese salad cooked over a charcoal grill.
Here is what you’ll need.
• thinly sliced chicken breast
• 1/2 red pepper per 4 breast, sliced
• your favorite BBQ sauce
• bacon
• colby jack cheese
• olive oil
• corn
• spinach and various berry fruits.
After you’ve lit your grill with the extreme start, you’ll want to toss your chicken in olive oil. Olive oil helps protect your chicken by sealing in the moisture and helps sear it for a flavorful outside.
Then, simply slice your red peppers into strips and cook your bacon. (Hint: We typically cook a recipe like this the morning after we have a little bacon for breakfast, simply because it cuts down on the prep time.)
Once your coals are ready, you’ll grill the chicken, the corn, and the peppers. On the last flip of the chicken, I always put the bacon on the grill to allow it to heat up and cook a little.
Once the chicken is cooked, remove it from the grill and toss it in a bowl with your favorite BBQ sauce. Once thoroughly coated, place it back on the grill. Cover it with the bacon, peppers and 2 slices of cheese. Leave it on the grill until melted.
We serve ours with a side salad. It’s simply a combo of spinach, fresh berries (usually sliced strawberries, blackberries, and blueberries) and sprinkled with blue cheese.
This is a super simple meal with a ton of flavor and {other than the bacon} pretty good for you. But it’s bacon, so it gets a pass. And cheese. Shhhh. All things in moderation and stuff. And we are super excited to have a way to cook it over charcoal again without the lighter fluid.
See? You just thought fire logs were a winter time thing.
