Barbecue is a staple for summer. Also, is it just me, or are there like twenty spellings for Bar-B-Cue? Am I making these up in my head? Probably.
But with nights beside the pool, we’re always looking for something easy and yummy with a side of healthy, that the whole family will love. So we’re thrilled to share our barbecue pineapple chicken recipe today.
barbecue pineapple chicken: what you’ll need
For the chicken:
• Chicken Breast
• Pineapple
• Cheese – we love cream Havarti
• Barbecue sauce
For the veggies:
{they don’t make the prettiest of photography, but we promise they’re simple and delicious.}
• peppers {red, yellow, green}
• onions
• squash
• virgin olive oil
• salt and pepper
For the salad:
A combo of lettuces, apple, cashews, blue cheese, and cranberries – add any dressing you like.
barbecue pineapple chicken: how to make it
We toss a medium sized breast in our favorite sauce with a little pineapple juice in the mix. Then grill it for five minutes on each side. Retoss it in some fresh sauce, add the sliced pineapple to the grill and grill for another 4 minutes on each side.
Once we remove everything, we retoss the chicken in sauce again, layer it with the grilled pineapple and a slice or two of cheese. Stick it in a warm oven for a couple or until the cheese melts and then drizzle it with sauce.
The veggies are just as simple. Cut up 1 yellow, red and green bell pepper, 1/2 white onion and 1 squash. Add 1 Tbsp virgin olive oil and sprinkle with salt and pepper to taste. Then simply sauté to your liking.
