This is more of a cold weather recipe, but since we’re on the cusp of spring, I thought I’d share it anyway. Because sometimes stopping in the middle of all the client/construction/every day chaos is nice… and I love a good, simple recipe. We’re sharing how to make bacon avocado mini grilled cheese!
It snowed on Saturday – and we’re in the middle of March. While we plan to fire up our pool and dive right into spring break with the kids, we’re waiting on the ground to thaw before we can throw any real parties.
But since we were “snowed in” the other day {it melted by lunch}, we thought this is the perfect little recipe to share, which pairs perfectly with the unpredictable weather as of late.
Bacon avocado mini grilled cheese is a big hit with the teens in our house right now, and here’s what you’ll need: {It’s so basic, it’s silly… but sometimes these are the best kind of ideas!}
• a baguette from your local bakery
• havarti cheese {any cheese will do}
• tomato
• avocado
• bacon
• butter + salt + pepper
Cook your bacon a head of time, and slice your bread into slices, just like you would for a sandwich.
I went ahead and prepped the avocado {mashed up in a bowl} and sliced the tomato, too… so everything is ready to go.
Preheat your oven and prep a cooking sheet, because you’ll want to move these sandwiches to the oven to make them more manageable.
Place each piece of bread with butter on the bottom, face up, with a little folded piece of cheese on top of each side. Cook on low heat stovetop until the cheese starts to melt.
Move to a cooking pan, and place your fixins.
Pair up your sides that will make a complete sandwich.
We added avocado, tomato, bacon… and a little salt + pepper to the mix. Then we lightly toasted the sandwiches in the oven so that the cheese was melted.
Tada! These are ready to go after lightly toasting in the oven, and pair perfectly with tomato soup! YUM. MY.
This is the perfect little comfort food for an unexpected snow day.
