Some days you crave something a little different than the normal and some days you just go in the pantry to see what you have and make a meal of it. I’m not telling what day this was, because either way it was a delicious day at the Mills’ table!
Ashley says this might be here favorite ever, but let’s be honest that’s what she says every time we cook. Loyalty to past foods is not her strong suit. Poor foods. Either way, it’s a simple and delicious meal that’s easy to cook for a large group.
Bonus: It won’t leave you with that icky food hangover that some things give you.
Here is what you’ll need for some Chipotle Stuffed Bell Peppers:
• 1 lb chicken • 1 can Ro*Tel • 1 can black beans 1 can yellow corn • 2 cups rice • bell peppers • fresh mozzarella cheese slices • guacamole • sour cream • chipotle sauce or fajita seasoning • salsa
This would yield plenty for about 1 dozen stuffed {and sliced} bell peppers. We tend to prefer grilled chicken over baked, so we simply marinate our chicken in extra virgin light olive oil and grill, then slice it up. As the chicken is cooking you can also cook the rice to the directions on the package.
Open any canned items and pour out the juice from them, except the Ro*Tel.
Wash and slice your bell peppers in half, making sure to clean out the seeds. place them on a baking tray and slide them in a preheated oven at 350 degrees.
Next, you can make your chipotle sauce while everything finishes cooking. (Grab our recipe here.) Or if you want a less spicy version you can use your favorite fajita seasoning.
Once the chicken is cooked, combine it in a wok with the beans, corn, Ro*Tel, rice and chipotle sauce. Simmer it on a medium heat and until it is fully warmed, mixing as it warms.
Pull the bell peppers out of the oven and place a slice of mozzarella in the pepper. Then simply fill the pepper with the mixture from the wok.
Place it back in the oven for about 5 minutes.
We serve ours with a spoonful of guacamole and sour cream on top, and a side of salsa.
It makes for a surprisingly filling and {not-so-terrible} fun meal.
