We’re on the home stretch and thought it was perfect timing to whip up a little recipe. We don’t share many of those anymore, so it’s been fun doing a few for the holidays. Today, we’re sharing easy cranberry brie bites! Because in my world, it’s the easier the better. I guess you could say this is our own little version of this goodness.

This little recipe is easy peasy and the perfect little finger food. They’ve become pretty popular over the last few years, and it’s a definite go-to for us before any holiday party.
They are DELICIOUS if you haven’t had them before. I try to be gluten-less around here, so they are DANGEROUSLY delicious. Like, I could easily make my own gluten-free version, but I don’t want to. They’re that good.
Here’s what you’ll need:
• One can of croissant rolls
• Brie Cheese – I purchased the kind shaped like this for easy cutting since it usually comes in a giant slice or wheel.
• Flour {just a little} for rolling out your dough
• Cranberry sauce – really, any kind of yummy jelly would do, like pepper jelly or raspberry. I also combined this with orange marmalade.
• Pisatchios or pecans {for a little crunch – if you have nut allergies, they’re not essential.}
• Rosemary
You’ll also need a mini muffin tin, {this recipe yields 24} + a rolling pin + cooking spray.
Note: Leave the brie in the fridge until you’re ready for it, since it’s easier to work with when cold. Preheat your oven to 375.
Connect the dough at the seams and roll it out smoothly on a clean surface. When it’s looking good, divide each piece up into 24 almost-equal squares.
• Pinch each square at the corners and place into well-greased mini-muffin pans.
• When you’re done, remove the brie from the fridge, and cut into little cubes. I just eyeball this, but about an inch wide will do. I cut my log into slices so they fit nicely in the pan. You can leave the skin or remove it, as it is edible. I removed it because of picky eaters in my fam.
• Mix your cranberry sauce with the marmalade. {if you wish, mix with marmalade for a little extra flavor – I did about 1/3 marmalade to cranberry.} Then dollop your cranberry sauce on top. I just did a little bit as I went as seen here. Again, to taste is fine. Just be careful not to overfill those baking cups.
• Add pistachios and a few sprigs of rosemary to the top.
• Bake on 375 for 10ish minutes – just look to see if the edges are golden brown and cooked through.
A little more or less, depending on your oven.
While we waited for that, these guys were waiting on the floor for morsels. They absolutely love it when I drop things, and are particularly fond of pistachios. No worries, they only had one because their fatty content isn’t the best for dogs, but I couldn’t resist giving them a little treat. I mean, how can I resist those faces?
And then they were finito! I pulled them out right at 10 minutes, and they were absolutely perfect. Let cool for a few minutes before serving.
Tada! The perfect little holiday treat.
