Happy end of the week, friends! It’s been a busy week for us with amazing things we’re grateful for. So we thought we’d hop on with something easy we haven’t shared in a while. And that’s a great easy greek salad recipe!

But once upon a time we shared recipes a little more often than we do these days. And we thought this one was perfect for the upcoming spring season. You’re going to want to save this one for minimal prep when it comes to hosting.
This salad is so versatile, you can serve it as crackers as an appetizer, or in bowls with a fork. It’s truly yummy, either way. And not half bad for you, either.
Here’s what you’ll need to make this simple salad: {You can adjust whatever you want for taste.}
• 2 small tomatoes
• 1/2 cucumber
• 1 avocado
• 20 olives
• 2 oz crumbled goat cheese
• Optional: +Dash of salt and pepper to taste.
Simply chop, mix and serve.
It’s a winner in all the circles for an easy app. Or some nights, a main course at our house.
