Happy Monday, lovelies!
I’m decompressing from the weekend, Haven, and fun family stuff that’s kept us pretty on-the-go for the last week as we’re embracing the final days of summer {as much as it pains me to write that.} And I wanted to share a fun little recipe today with all of you.
We don’t share them often here, but when we do, ya know they’re kinda great, because we’re total foodie nerd snobs and we only share the good stuff.
Last year, we shared a little recipe with all of you that’s super easy. Since then, we’ve kind of fine tuned it. It was so great, we wanted to share it again.
It’s the best little side dish, and sometimes I love it so much, I’ll eat just it for dinner in the summertime when I’m looking for something light, easy and fresh. Paired with anything on the grill, it really is a wonderful little recipe to keep in your back pocket.
Here’s what you’ll need: Tomatoes {we love organic} Balsamic vinaigrette {1/4 C} + {1 T} Honey + Feta Cheese {to taste} + Basil {to taste}. Slice up those tomatoes, pour your mixture, and sprinkle the feta + basil.
Tada! Yum. My.

YUM!! I love balsamic and feta and basil, so this recipe looks awesome (and easy – my favorite!). Thanks for sharing 🙂

I’m definitely going to try this with the honey and balsamic. I love to use my homegrown tomatoes with avocados, add a little fresh squeezed lime and olive oil, add a little basil, salt and pepper. Really yummy.

try your recipe but add watermelon too. yum!
my summertime go to is caprese. to make it an easy side dish with grilled fish, do organic grape tomatoes (halved), fresh mozzarella (cubed), fresh basil (easiest garden herb to grow ;), EVOO, salt and pepper. reduce the balsamic vinegar on the stove top. it turns into a sweet and salty syrup all by itself when you add a little heat! put it on top of spring greens or serve it as a side with grilled chicken or fish to jazz it up.
