Let’s be honest. There are
a lot of times times I get accused of being the champion of all things food. That I am the one who insists on indulging the taste buds when another party wants to commit to salads healthy foods only. This is a complete farce.
Two exhibits. The other night we were laying in bed watching Friday Night Lights. Yeah, I know… we are about 6 years late on this one… we’ve been busy with the offspring and Octonauts marathons.
It’s almost 10, and Ashley proclaims: “You know what would be good right now? Bacon.” To which I respond, “There is never a bad time for bacon.” Cue total indulgence a-la the food of the gods. Because sometimes, we’re totally wild like that. It’s how we roll.
Exhibit number two is the soup below. I was going to settle for a sandwich, Ashley wanted soup. I liked her idea better. So we put our heads together and turned our traditional lasagna dish into a soup.
This is a slap-yo-momma-it’s-so-good kind of soup, and super simple to make. And it’s perfect for fall.
Here is what you will need for the soup.
• 1lb chicken
• 2 cups pasta of your choice
• 3 T. Parsley flakes
• 1/8 T. garlic powder
• 1 T. Basil
• 1 T black pepper
• 1 1/2 T kosher salt
• 8 oz tomato sauce
• 6 oz tomato paste
• 32 oz. chicken stock
• 3 small tomatoes diced
• 8oz cup Ricotta cheese
• 6 oz fresh parmesan cheese
• 8. oz fresh mozarrella cheese
Start by cooking your chicken, We grilled ours on the Stok grill, because it’s less messy and makes me feel manly. Then simply shred the chicken and dump it in your pot.
Next add all the spices, the tomatoes, tomato paste, tomato sauce, pasta and chicken stock. Boil all of this together for about 12-15 minutes.
Then dump all the cheeses and boil until they are fully melted. Stir often to help it melt evenly.
For the bread you will need.
• flat bread
• sliced plum tomatoes
• slices of fresh mozarrella cheese
Lay out your flat bread, cover with tomatoes and cheese and sprinkle with basil. Cook it on broil until all the cheese is melted. (Hint: I would do this after the soup is done and cooling.)
There you have it – a better idea than sandwiches, super simple and amazingly tasty.
