‘Tis the season for all things sweets and decadent treats… and today we thought we’d share one of our favorite recipes. This Christmas cowboy cookie recipe is so basic, but an easy go-to if you’re wanting to try your hand at baking something homemade this season. It comes in two versions, and is sure to rock your face off. Perfect for any gathering and home made to boot! Baking is so therapeutic sometimes, we thought we’d share. So without further ado, this Christmas cowboy cookie recipe!
The first version has chocolate chips, and the next has white chocolate and Craisins.
Both versions are oh so wonderful and today we’re sharing the recipe!
Here’s what you’ll need:
1 cup butter softened
1 cup white sugar
1 cup packed brown sugar 2 cups of all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 teaspoon salt
2 eggs
1 tsp vanilla extract
2 cups rolled oats
Optional, depending on the version you want to make: semi-sweet chocolate chip morsels OR white chocolate morsels + craisins {one container of each, to taste will do!} Yields about 24 cookies.
Or, you could treat yo self and do both. We did. And they were perfect for camping with friends!
Preheat your oven to 375 degrees and set aside baking sheets {greased or with foil}.
In a large bowl, add the butter, white and brown sugar.
Beat in the eggs one at a time.
Stir in the vanilla.
Stir in the Flour, baking soda and salt.
Add the rolled oats.
Add your morsels of choice: {Semi-sweet morsels or white chocolate and cranberries.}
Taste the batter when no one is looking because you know that you want to and you do what you want.
When your mix looks something like this, add to your baking sheets by the spoon-fulls.
Bake for around ten minutes, keeping an eye on them. Allow to cool.
Tada! You’re a baking genius and your cookies are ready!
These cookies are the perfect balance of sweet and salty, with a little bit of crisp with gooey in the middle.
