‘Tis the season of exams and havoc at our house, and the only thing keeping us calm is knowing that spring will probably be even crazier. We still can’t decide how we feel about that, so we’re embracing the now. To take a break from all the things this weekend, we decided to whip up a batch of the easiest cookies ever for a little study fuel. The kids had a blast mixing these up, and you will, too. They’re OH so easy.
And pretty, if we do say so ourselves.
Here’s what you’ll need:
• cake mix of your choice – we used yellow cake + red velvet – we also grabbed lemon, which we’ll try later.
• 2 eggs
• vegetable oil {1/2 cup per batch}
• sprinkles {because why not?}
• chocolate chips + white chocolate chips {for the yellow cake mix + white chocolate for the red velvet}.
It’s anything you’d like to add for whatever combo you make. These things are so fluffy and good, you’ll love this easy how-to.
• Preheat the oven to 350. While it’s warming up, mix your cake mix, eggs + 1/2 cup of oil, + any ‘fillers’ you’d like since the possibilities really are endless.
A little tip: Use parchment paper on two cooking sheets + an ice cream scoop to dole out those cookies. Since the cookies spread better on parchment paper {it keeps them from becoming too greasy}, we used that instead of foil.
Bake for 10-12 minutes, depending on your oven, until the center seems to be fully cooked.
Yum! They’re ready to go! You can add sprinkles to the mix or add them to the top. We added them to the top while they were still warm, but we recommend putting them in with your mix for better sticking.
