We originally shared this little gem of a recipe a year ago – last fall. But we’re kind of on that kick again, and the veggies are at their height of the summer season and well… just had to re-share today. Have you ever tried a recipe that was so healthy, easy, fresh, and delicious, that after you made it for about three weeks straight, you couldn’t help but share with everyone you knew?
We do that. The whole food binge kick thing.
It’s so simple, it’s almost embarrassing that we turned this puppy into a post. But then we remembered A. we’re shameless, and B. thought we would be depriving you, if we didn’t. We didn’t want anyone to miss out.
Everyone must also experience the partay in the mizouth.
The funny part is, we didn’t even make it up. A clever friend of ours brought it to a recent gathering, and we just had to share it here. We dubbed it the feta fresh salad. And it is, indeed. The perfect thing to whip up as a side dish or main dish… however you like. It would make a great snack, appetizer a-la fresh garden ‘salsa’ with sea salt pita crackers… just sayin’.
The possibilities with this simple goodness kind of recipe, is kind of endless. Here’s what you’ll need…
Cucumber + avocado + tomato + feta cheese.
Slice, dice, and toss. All to taste.
Serve it up with a sprinkling of feta.
If you don’t like feta, you may or may not be missing out. ;} We recommend tossing it up with a little vinaigrette dressing of your choice to see how it tastes.
When I first tried it, I kind of freaked out, because A. It was basically all my favorite veggies in a bowl {mixed with fruit if ya wanna get technical} B. Feta {and I could eat any cheese and all the cheese all day long- no that’s not weird} C. I couldn’t believe I hadn’t thought of such a concoction. D. Sometimes I make repeated lists in posts because it makes me sound official and just roll with it.
Try it. It’s fresh and muy delicioso – guaranteed to be your new go-to.
We’re out of ingredients at the time of writing this post, as the avocados kinda went cray cray and it was tragedy. You know how it goes:

I make a version of this for lunch a lot and it’s SO good. I’ve never tried it with avocados, but I include yellow peppers and red onions. I chop everything all when I get home from the store and then have it handy for the next few days. I’ll add grilled chicken or even steak to make it more of a meal. YUM. 🙂

I put my avocados in the fridge just as they are almost ready. It buys a few days.

Most of this recipe is really just to taste. I love lots of feta and no salt since the feta is slightly salty. My husband doesn t love basil but I do. I ll list the ingredients and you choose your amounts based on your taste. To toast your pine nuts add them to a sauce pan on do it on the stove. You re much less likely to burn them that way.
