Lately, I feel like Private Benjamin Buford A.K.A. “Bubba”. I’ve forced Ashley to be on a Shrimp kick. And by forced, I mean I cooked up some shrimp and we devour them like zombies in the apocalypse.
I want all the shrimp. Lemon pepper shrimp, cajun shrimp, fried shrimp, shrimp salad, shrimp sandwich, blackened shrimp, grilled shrimp, shrimp with grits, stir fry shrimp and I just really want all. of. the. shrimp.
And Ashley fights me for the shrimp. Again, like zombies.
So today we thought we’d share one of our favorite shrimp recipes: Spicy Shrimp Poppers.
They’re great as a meal and amazing as an appetizer served cold.
Here’s what you’ll need for 1 pound of shrimp {double or triple for more}:
• 1 pound deveined and shelled shrimp • 1 cup flour • 1 cup buttermilk • 1/2 cup mayonnaise • 1 TBSP asian style chili sauce • 2 tsp honey • 1 egg •1/4 tsp salt 1/4 tsp pepper
Cover the bottom of a frying pan with 1/2 inch of oil and set to a medium heat.
Now mix the mayonnaise, chili sauce, honey, salt and pepper into a bowl and set it aside. This will be your sauce.
In other medium sized bowls: pour your buttermilk and whip an egg into it. In the third bowl, place your flour. Soak your shrimp in the wet mixture, toss it in the flour, and then fry it in the oil. It’ll only take about 6 minutes or so to fry them.
Now simply put the cooked shrimp in a bowl and toss it with the sauce. It’s ready to serve, or you can refrigerate it to pull out later as a appetizer.
It makes for a fun party treat arranged on top of some spinach.
