Building always gives me time to day dream a little. But only a little, because I don’t want to take off a finger, so I wouldn’t recommend it… and I’m weird. Because I day dream about food
So whilst building our latest barn door and not losing a digit (check it out here) I was dreaming about seafood and avocado. I know I’m not the only one who does this. Go ahead… admit it.
::cue crickets::
So we started throwing ideas into the air, and came up with this concotion. And once the door was hung, we decided to try it out. Ashley has proclaimed this as one of her favorites.
It’s super simple, and fresh, too.
You’ll need the following ingredients:
• 3 avocados • juice of 2 limes • 2 small tomatoes • 1/2 white onion • 1/2 yellow bell pepper • 1/3 cup cilantro • 1 small cucumber • 3/4 pounds peeled tail-less shrimp • salt
Start by pan searing the shrimp by placing two tablespoons of vegetable oil and the shrimp into a frying pan. sear it for about 3 minutes, stirring every 30 seconds. Then add in the juice of 1 lime and continue cooking until shrimp is cooked throughly. Set the shrimp aside.
While the shrimp cools a bit you will want to dice up all your other ingredients and place them in a large bowl. Once the shrimp cools, cut each shrimp into 3 or 4 pieces and toss them in the bowl.
Add in juice from one lime, and a teaspoon of salt (more or less as you desire) and mix everything together.
Transfer it to anything you wish to serve it in, and enjoy!
It goes great with pita crackers, chips and toasted bread for an instant bruschetta. MMMMMM!
And that my friends is a simple shrimp avocado salsa that is sure to please any gathering.
