Hey guys, hope you are all geared up for the 4th, even if the world cup yesterday didn’t go our way. But those guys played their hearts out.
Now that I have that out of my system, let’s move on to some good food. We declare ourselves foodie dorks all the time around here, and we love anything that’s easy and fun to do. This is a super simple little recipe, and can be made with a lot that you may have on hand.
First, you’re going to mix up a nice little”base” to work with. Here’s what you will need for the chicken salad: • rotisserie chicken • one package of plain Greek yogurt • 2 tsp yellow mustard • salt • black pepper • pita crackers or bread
This makes great beginnings for your “salad bar” and all the add-ins. We got started by shredding the chicken and mixing in the greek yogurt and yellow mustard. Then we added 2 tsp salt + 1 tsp pepper. Taste test it as you go, and add more or less as you prefer.
Then you’ll want all your add-ins. You could go all-out traditional, fruity, or try a variety of things. We used: • sliced olives • sliced grapes • sliced strawberries • pomegranate cranberries • almonds • banana peppers • peppers • cherry tomatoes • cucumbers.
Once you have the chicken base mixed up, you’re ready to go. Dress the serving area with all your fixins (it’s what we say here in the south).
That way, everyone gets a taste of what they love.
We threw in some fun plates + napkins, a little bunting and a chalkboard for some personality. The possibilities are kind of endless.
From birthdays to baby showers, or an easy meal with an excuse for fellowship with friends beyond the barbecue.
Though barbecue is pretty great. Mmmm. Ribs.
Put your spin on it and have a blast. We used little ice-cream spoons for servers in tiny bowls, and hand written flags on bits of scrapbook paper with swizzle sticks. Where would our life be without swizzle sticks? Or that word? The world may never know.
My favorite combos: olives + banana peppers.

The kids had a blast just trying different things on their plates, but the strawberries disappeared mysteriously.
It was fun watching what everyone picked. And a big hit, to boot.
