Happy Memorial Day, everyone!
We thought we’d pop in briefly for a little popsicle recipe that’s quickly becoming a fave around our home. We’re always looking for better ways to infuse a little fun into the kids with their summer shenanigans, and today we wanted to share this recipe. It’s the perfect holiday to try it out, after all!
Here’s what you’ll need:
Just for pops: • 6 strawberries • 1/2 cup lime juice • 1/3 cup of sugar/sweetener of your choice {We know some of you guys may have given up sugar-we thought this was better than high fructose whateverness} • 1 quart water
If you want a little left over to drink: {Yummy juice!} • 12 strawberries • 1 cup lime juice • 2/3 cup sugar or sweetener of your choice {see ridiculous over-explanation above} • 2 quarts water
Here’s where this little recipe gets a little weird: There is an I-need-it-today version to this recipe {as described above} and a smack-yo-momma-good-but-you-have-to-plan-ahead, version {below}.
Here is the difference: For the quick version, you simply use the juice of the limes. But for the smack-yo-momma version, you’ll blend the limes for the pulp and all. If you use the blended limes the day of, they’re a leeeeetttttle bitter. If you wait a day, they’re heavenly sweet with just the right amount of tart. {What we talk about below is the smack yo momma version, so make the adjustment if you need it today.}
Smack-yo-momma-good-popsicles: Start by making a little limeade: Peel some limes and blend as we did above, if you leave a little peel on the lime, no biggie. Now add in the sweetener of your choice + 1 quart water (If you can’t get 1 quart of water in your blender, use less and it’ll still work out.)
For both recipes: Now simply add in your strawberries (after washing and taking off the tops) and add a little more or less than our 12, depending on how much of a strawberry taste you like. The strawberries will add a lot of natural sweetness, to balance out that tart, as well.
For the smack-yo-mama-version: Then put it in the fridge and let it sit for 24 hours. This aids in the blending of the flavors and really brings out the amazing flavor you just created.
For both recipes: We poured them into some popsicle molds, and after freezing for a while…
Tada! The perfect homemade, backyard treat.
We love these little molds we picked up at Publix – sometimes you can find the most fab things there – these are perfect for catching the dribbles into a delectable juice. I mean, is there any greater tragedy than a lost popsicle juice? Waste not want not. Or something else that sounds legit, here.
